Welcome to Cura Personalis Foodie! Note the bloggie name change…to be explained more thoroughly tomorrow
I’m headed off to Disneyland this lovely morning with mother dearest for her day off work.
For now, I’ll leave you with a few pictures of what’s to come…
Lemon-Ricotta Pancakes with Blueberry Sauce.
Absolutely lovely for a weekend morning breakfast. Light, fluffy, and delicate.
Leftovers Power Wrap.
This has been my newest go-to lunch. Quick, easy, filling, and ALWAYS delicious.
OSG Butternut Squash Mac ‘n Cheese.
An interesting twist on an old-school classic. Good, but unfortunately, I didn’t have any fresh butternut squash on hand. I opted for pumpkin
Stuffed Portabella Mushrooms.
This was actually a part of our Christmas dinner menu. We made sausage-stuffed portabella mushrooms; the standard version included turkey sausage and parmesan, while my own had sausage-less sausage (ironic much?) and pesto.
As mentioned in this post, complete with a festive new years twist! I modified the recipe a little bit but kept most everything else the same.
Adapted from Hannah Kaminsky’s Bittersweet. Love the “self-frosting” concept, but the cupcake itself could use some improvement!
I made this for our Christmas dessert. Everyone was pretty full from dinner, but those who had dinner seemed to enjoy it. My cousin, in particular, ate ~4 servings single-handedly. Impressive, I know.
I’ve already made a variant of this since Christmas. Deee-lish.
Chocolate-Chip Cookie Dough Brownies.
Okay okay, so remember how I said I recently made a variant on CCK’s pie? This was it!
The brownies looked ahhhhh-mazing, but I didn’t actually get to try any. I brought the brownies to my old high school to share with the newspaper kiddos, and by the time I made my way back to the table, they were completely demolished!
YUMMMMMMM. Just looking back, I can’t wait to share what I’ve made these past few days.
See you after Disneyland
