Breakfast
Some days, you just need a little bit of good ‘ole reliable in your life. Today is one of those days.
I woke up a bit tired/sick and bee-lined to make the now-proclaimed best bowl of oatmeal ever. That included something like:
- Old-fashioned rolled oats
- Chia seeds
- Pumpkin Pie Spice
- Cinnamon
- Caramelized Banana
With iced-cawfee on the ice.
- Caramel Vanilla Coffee (leftover from a keurig brew…thanks B
)
- Soymilk
- A dash of stevia
- Ice, ice baby

Lunch
French was hilarious this morning. We watched an animated movie (in French) about a hockey player, which was entertainingly cute. Following class, I headed to the gym to hop on the elliptical and read a few chapters of accounting. Queen of multi-tasking, right here.
After class, I showered, got my life together, and went to meet H and friends for lunch.
Lunch at Leo’s (the dining hall) was surprisingly good. <gasp!>
I went on my own version of a dining hall scavenger hunt and returned with this lean, green beauty:
The aforementioned insanity of deliciousness was a mix of…
- Gourmet mixed greens
- Mediterranean Lentil Salad (bomb!)
- Cucumber & Onion Salad w/ Vinaigrette
- Braised Red Cabbage with Warm Apples
- Tomatoes
- Carrots
- More cukes…’cause you can never have too many
This salad was HUGE—so big that the kind lady who tossed it for me almost had to use two bowls.
I do believe I would have been double fisting salads.
Oh baby.
Murple purple. The braised cabbage was really, really good, so I went back for seconds.
Life’s a garden. I dig it. Life’s a cabbage. I love it.
And because cantaloupe completes me, I grabbed some ‘loupe and grapes to go.
I loved that lunch had tons of flavors and left me both satisfied but not stuffed and ready to conquer.
Yes, that basically means I’m basically a lunch conquistador. Just call me Cortez.
So where did we leave off? Lunch? Ah yes, that amaaaaazing lunch.
I had two more classes after lunch and then an interview.
#do work.
Except homework, which I have (unfortunately) done very little of today.
Uhh yeah, I need to get on that.
In other words, this post is going to be short, sweet, and to the point.

I’ve always wanted to say that.
Dinner
Things got a little crazy for dinner. I wasn’t quite sure what I wanted, so I decided to try a little bit of everything.
Which really translated to “a lot of everything.”
Sampler platter (counterclockwise):
- Garlic Steamed Spinach
- There was a tiny piece of cardboard in this. CARDBOARD! I’ll pass on the extra fiber, thanks.
- Bali Butternut Squash
- I loved this dish last time it appeared at Leo’s, but this time, I was disappointed. The flavors were watered down, and sweet potatoes were subbed for butternut squash. Disappointing

- Oven-roasted red potatoes
- Good but nothing to write home about
- Steamed Broccoli
- Like the kind you could could gum to death. No teeth required.
- Squash Medley
- A whole lot of meh.
A small plate of vegetarian spaghetti “bolognese,’” which was not as good as I remembered from past experiences.
It was sauce-deprived. That equates to a first degree crime, in my opinion.
Aaaand a sweet potato. Unfortunately, it was rather flavor-less.
Oh Leo’s…Right after I finish praising you
Dessert
Dinner left me hungry for more (okay, maybe just hungry for something that tasted good…), I went in search of dessert with E.
We swooped in for ice cream.
Chocolate brownie batter; Candy bar; Cake batter; ice creams.
No regrets.
It wasn’t exactly “part of the plan” in terms of this week’s goal of natural eating, but today, it was good for the soul. One of those things that (I hope) I’ll remember when I’m older. One of those stories I’ll tell my kids when I’m old and gray.
One of those “remember when” reminiscing moments when I shamelessly ate three flavors of ice cream in college for one reason and one reason alone:
Because I can.
Because that’s the joy of life. Tasting it, without looking back.

What do you usually put in your sweet potato?
The purple salad looks crazy and like something from the sea (maybe octopus)!
At the dining hall, I normally eat it plain! If I’m in my dorm room (or at home) though, I’ll use nut butter. Especially walnut butter! See this post and this post for details.
