Day 2
Breakfast
“Oatmeal Minus the Oats” from Carrots ‘N Cake
- 3/4 cup egg whites
- 1/2 cup almond milk
- 1 tbsp flaxseed
- 1 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1/2 banana, diced
- peanut butter for topping
Whisk eggs and almond milk together until slightly foamy. Add in all other ingredients (except peanut butter), and stir again. In a medium saucepan, heat until the mixture thickens, stirring slowly to prevent the bottom from burning.
Top with nut butter, and enjoy!
