I can’t even describe how jam-packed these next few weeks are. In a good way.

There’s tons of awesome events in the coming days that are supposed to be bunches of fun.

Can’t wait.

For spring days with friends.

For the late days of April.

For my first Hilltop birthday.

For summer!

Prepare to see snippets of me. Sometimes food, sometimes words, sometimes both…and sometimes neither. Just know that I’m alive and well (mostly Winking smile).

Day 1 (continued)

Salad from Leo’s

  • Romaine
  • Green beans
  • Broccoli
  • Cauliflower
  • Carrots
  • Tomatoes
  • Lentil salad
  • Hardboiled Eggs
  • Feta

Dinner

  • Brussell Sprouts
  • Garlic cauliflower
  • Roasted sweet potato
  • Vegetable-Barley Ragout
  • Beans, I think? 

Day 2

Breakfast

“Oatmeal Minus the Oats” from Carrots ‘N Cake

  • 3/4 cup egg whites
  • 1/2 cup almond milk
  • 1 tbsp flaxseed
  • 1 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/2 banana, diced
  • peanut butter for topping

Whisk eggs and almond milk together until slightly foamy. Add in all other ingredients (except peanut butter), and stir again. In a medium saucepan, heat until the mixture thickens, stirring slowly to prevent the bottom from burning.

Top with nut butter, and enjoy!

CE&SF – Day 1

Welcome to Day 1 of Clean Eats & Springtime Feats (CE&SF)!

Day 1

Breakfast:

Banana & Beet Green Smoothie

  • 1 banana, frozen in chunks
  • 1 cup almond milk
  • 2 cups beet greens
  • 2 ice cubes

Blend until smooth.

Simple Oatmeal

  • 1/3 cup old-fashioned oatmeal
  • 1/4 tsp cinnamon
  • 1/2 cup boiling hot water
  • topping: peanut butter (mix of homemade and Giant brand)

Place oats and cinnamon in a small bowl. Add boiling water. Let sit 3 minutes. Top with nut butter, and enjoy!

Clean-ed Up Eats

This (long) weekend was awesome. It was hilarious, wonderfully relaxing, and just plain fun.

Mother dearest and I tackled D.C.’s best eats including Paul Bakery, Baked & Wired, Kushi, Busboys & Poets, Eastern Market, Open City, Founding Farmers, Nage, and so many more I lost count.

Armed with daily deal certificates to use up, we ordered our fair share of appetizers, sides, desserts, snacks, etc. That included crab grits, crabcakes, cornbread, sesame kale, white chocolate bread pudding, and carrot cake. Oh yes, carrot cake the size of your head.

Delicious. And it was fun! Loads of fun.

But while at our “last supper” at Nage before Mum flew home, we both agreed that were in need of a little break from indulgent food escapades.

And now that we have our memories of a D.C. Easter, I think we’re both ready to recover from what can only we described as an epic food coma.

So that’s what I ‘m doing this week! Trying to eat mindfully and cleanly.

That’s not to say I didn’t exercise eat well this past week—I’m just ready to go back to “normal eating” again. Still delicious, just slightly less indulgent.

In other words, hugh jass salads sound amazing right now.

So here’s what I’ll be doing:

10 Days of Clean Eating

  • Lots of
    • Balanced meals
      • //veggies – lots of greens & sweet potatoes, please!
      • // whole grains – quinoa, brown rice, and oatmeal will definitely be making an appearance
      • // lean proteins – beans, tofu, eggs, edamame, fish (if possible), seitan and cheese (very sparingly)
      • // healthy fats!  – nut butter/nuts, mono and polyunsaturated oils
    • Hydration
      • Water or tea, coffee in moderation
    • Mindful eating
      • Eating SLOWLY
      • Listening to hunger signals
      • Eating when hungry, stopping when full
    • Moderate exercise and sleep
      • Okay, so this doesn’t exactly have to do with food, but it is definitely necessary.
  • Less of
    • Refined white flour and white sugar—totally NOT in the mood for dessert right now
    • Highly processed goods (chips, pretezels, goldfish, protein bars, granola bars, etc.)
    • Mindless eating
      • Eating out of boredom or stress
      • Eating only because other people are eating

B will be partaking in this challenge with me (though I’m sure she’ll modify to her needs), but if you would care to partake, just let me know ! Smile

A D.C. Easter

It was my first Easter away from “home” in California.

And I must say, it was quite unforgettable.

Despite plenty of real work, I really couldn’t have asked…

Sweet, Sweet Break

Oh break, how I love thee.

After a grueling few weeks following Spring Break, this was a vacation much needed.

Destination: Washington D.C.

Wait, I live in Washington D.C.?

Well poop, who says that means it can’t be a vacation? I love what this city has to offer—everything from gourmet eateries to delicious hole-in-the-walls, yoga to hiking in greenbelts, doing nothing to doing everything.

It’s perfect for me. I could’ve happily spent this vacation on my own, but I was in for a treat instead…

That’s right, mother dearest flew out to join me for a few days soaking in the cherry blossoms of our capitol!

I’ve had plenty of real work/homework to do, but we’ve managed to squeeze in plenty of fun as well.

I’m a little bit behind on posts (and homework), so for now we can just peak at the first day or so of staycation paradise.

Day 1:

Started with me going to French. Afterwards, I attended to a few meetings before hanging around the campus coffee shop. A little while later, I was greeted by the wonderfully familiar face of Mom!

After meeting a few friends (S, P, and others), we promptly headed off to lunch at Paul, a french bakery/café in Georgetown. I ordered a smoked salmon tartine, while Mom opted for a goat cheese-kalamata olive tartine.

Both were good but not so spectacular that I’m dying to go back. The restaurant decorations, however, were AWESOME. Future house inspiration?

Of course, we were so close to a particularly fantastic cupcake shop that we just HAD to stop.

Enter Baked & Wired, my favorite cupcake/tea & coffee shop on the planet.

I bumped into a friend who works there, so he helped us pick out the two perfect cupcakes that would suit us best. The selectees?

1) Classic Strawberry: Vanilla cake with strawberry chunks and strawberry frosting

2) Vegan “Depression Era: Dense, chocolate cake with peanut butter-chocolate frosting

Both were great! Mum preferred the former, and I liked the latter best.

Then again, considering there wasn’t a single crumb left, I’d say we thoroughly enjoyed both.

I headed to my accounting class after lunch, while Mum killed time shopping on M St.
H&M addict? I’m not pointing any fingers. /points finger at Mom.

We then headed to our humble abode for the next few days and planned out dinner.
Naturally, we were both craving Ethiopian.

Is that natural? Oh you betcha.

Vegetarian Combo Platter for 2

Forgive me for not remembering all the names exactly, but it was something like this:

  • Gomen (stewed collard greens)
  • Tomato Salate
  • Atkilt Wot (cabbage, potatoes, carrots)
  • Misir Wot (red lentil + berbere sauce)
  • Misir Alitcha (Yellow split pea stew)
  • Shiro wot (Ground, dried chickpea stew)
  • heaps and heaps of awesome injera

And then, it was time for bed!

I was pooped with a capital P and proceeded to sleep 12 hours.

12 HOURS?!?!!??!

Who. am. I.

Off to do work!
